Fruit crisp


SERVES 8

Ingredients

6 cups thinly sliced peeled apples
1 cup cranberries (thawed frozen berries or fresh)
2 tablespoons white sugar
3/4 cup old fashioned rolled oats
1/3 cup packed brown sugar
2 tablespoons whole wheat flour
1/2 teaspoon ground cinnamon
2 tablespoons butter or trans-fat free stick spread
1/2 cup vanilla nonfat sugar-free yogurt

Dietitian's Tip: Any tart baking apple — such as Granny Smith, R.I. Greening or Northern Spy — works well in this crisp. Serve with a scoop of fat-free frozen yogurt or a dollop of light or fat-free whipped topping.

Directions

Mix apples, cranberries and white sugar together in a large mixing bowl. Transfer to a 9-inch pie plate or 2-quart square baking dish.

Combine the rolled oats, brown sugar, whole wheat flour and cinnamon in a small bowl. Cut in the butter or stick spread until crumbly. Distribute this mixture evenly over the apple mixture.

Bake at 375 F for 35 to 40 minutes or until the apples are tender. Serve it up warm with a dollop of yogurt on top.
